Mixed Potatoes Au Gratin
Adapted from The Cookin’Bunch: Finger Lickin’ Goodies From Lovin’ Kitchens Ebenezer African Methodist Episcopal Church Benevolent Craft Circle

1 lb. white potatoes
1 lb. sweet potatoes, peeled
cup apple juice
2 tbl all purpose flour
1/2 tsp salt
1/8 tsp pepper
1/4 tsp nutmeg (next time I would use allspice instead)
1 cup shredded cheese (we used Trader Joe’s Lite Mexican blend)

Slice potatoes into 1/8 inch thick slices. In a casserole dish, alternate layers of potatoes and sweet potatoes. Pour apple juice into measuring cup. Add flour and seasoning, mix well, and pour over potatoes. Bake about 30 minutes at 350 degrees. Liquid should be bubbling and look a little thick.* Sprinkle with cheese and bake 5 or 10 more minutes to melt cheese. Let stand 5 or 10 minutes before serving.

*If juice still looks thin, use a turkey baster to baste the juice over the potatoes and bake 5 more minutes. This seems to mix more starch into the juice to thicken it.
