Instead of 5 cups all purpose flour, this time I used:

-3 cups bread flour
-1 3/4 cups whole wheat flour (that I wanted to use up)
-1/4 cup almond flour (that I wanted to use up)

Next time, I would use slightly more yeast because this was a very heavy dough that took a long time to rise.
