chicken salad with oranges and dried cherries (a la rita)
adapted from this recipe:
smoked chicken salad with onions and dried cherries
4.5 cups diced smoked chicken
1.5 cups diced celery
2.25 cups diced onions
2.25 cups dried cherries
1 cup minced fresh basil
2 cups mayonnaise
1 tsp orange zest
3 tbsp fresh orange juice
salt and pepper to taste
place all ingredients in a mixing bowl and stir gently until well combined. refrigerate until ready to serve.
12 servings.
